This hash is easily modified
I use whatever vegetables I have on hand and everything so far has worked incredibly well together
Any root vegetable works great - sweet potatoes, radishes, turnips, parsnips, beets*
*Beets will turn this hash red making it very pretty but a little odd looking
Any greens work great but I like kale because it's a little more robust
Any tomatoes work with this as well - I like cherry and grape tomatoes most but romas or vine tomatoes work great too
Broccoli is an awesome addition to this hash - if using, chop small and add with onions, celery and pea pods. Also don't be afraid to use the stem of the broccoli. Just peel the outer skin and dice small.
Extra firm tofu works amazingly
No need to press tofu before scrambling as moisture will cook out
Used extra firm sprouted tofu from Trader Joe's and was cooked in about five minutes using induction burner at 360 degrees
Used truffle salt instead of regular salt and a little bit of garlic olive oil in the pan
