Easy enough for a stir fry
Tofu was really tasty in this dish but next time increase the veggies and decrease the rice
Substituted broccoli in place of mushrooms but next time would add both
Ginger was absolutely lovely and really came through
Way too many serrano peppers for us gringos - we only used 4 but would cut that in half easily, maybe only 1 serrano
Roast everything beforehand, don't boil - tomatillos, garlic, serranos...
May be worth another shot
For future reference - cut palm hearts in half lengthwise and rinse and dry very well
Allow to dry or pat dry
Definitely use the food processor to break it down into a more crab-like texture
This was an okay recipe but the palm hearts were a little too coarse and still tasted very canny
I totally botched this recipe because I added all the quinoa I cooked (3-4 c) instead of measuring it out
Ended up doubling the greens and onions and adding the rest of my sweet potatoes (not enough to double them), added some cauliflower florets to make up for the lack of sweet potato
Threw everything in a baking dish and baked at 375 for 25 mins. Came together in a healthy, yummy casserole
The flax eggs worked wonders - whisked flax and water together well and let sit at room temp for about 45 mins before actually using them - very egg-like
Sauce ratios
3 TBSP coconut aminos
Regular peanut butter
2 x TBSP maple syrup (3 TBSP in double batch)
1 tsp garlic chili oil
1 tsp avocado oil
Recipe is very sodium heavy - use low-sodium tamari next time - or coconut aminos ?
Added large head of broccoli, went very well
Peanuts or cashews make great garnish
Double mixed veggies (use 2 cups)
Consider doubling tofu because it's awesome or add cup of edamame
Demeyre 12" worked but got very full at the end
Used quinoa but any grain should work fine - 1 c dry is good ratio to rest of recipe
Use 2 cups of green onion
30 min roast on tofu in oven was awesome
Be generous with the veggies in this
I used about one cup each of leeks, mushrooms, peas, and asparagus
I used 2 small carrots
I also used homemade veggie stock and used 4 c instead of the 3 1/2 c in the recipe
I increased the white wine to 1/3 c
I have made this without the parsley and it still turned out great
We also used homemade vegan parmesan instead of the real deal
This recipe is awesome and is easier with a helper (someone to keep the broth hot and measured out while the other person minds the pot with the rice)
The key is to keep stirring the rice until all liquid is absorbed
Super delicious roasted veggies and chickpeas for a quick and easy dinner
Tossed with oil and spices in a bowl before turning out onto the sheet pan to cook
Followed recipe exactly and needed about 10 mins longer cook time total
Cut veggies a little smaller (bite size) than per recipe which helped to evenly cook all ingredients - carrots were still al dente but delicious
Turned out yummy but needed some changes
Doubled the bell pepper
Added carrots (2x) and a half yellow onion (use full onion next time)
Doubled the curry paste and added about a 1/4 c peanut butter - make curry paste a few days ahead as flavor develops beautifully as it sits
Used 3 chilis, could probably have used 4-5 if making for ourselves - was very mild
Inspired by my tortillas breaking when I tried to roll them into actual enchiladas

Used Impossible beef instead of lentils, 1 whole small white onion, 1 TBSP worcestershire, 1 TBSP maple syrup
Minced the onions, small dice on the red peppers
Sloppy Joe "meat" was absolutely delicious - enough for two meals of sloppy Joes x 2 sloppy Joes each
Next time - consider doubling garlic, adding jalepeno (mince like onions) or blackened poblano, consider smoked salt for more dimension of flavor
When cooking with Impossible or Beyond - start with meat in pan, then add onions/peppers/garlic after a minute or two of browning meat. Continue with recipe from there.
One batch of sauce will be enough for all the veggies and noodles
We doubled the sauce originally but found it too oily for everything. It made for a heavier meal.
Can add more than 2" ginger
Consider adding full curry paste, very mild flavored at 4 TBSP
Did not add any chilis but would probably be awesome
Delicata squash worked great - consider butternut, pumpkin, sweet potatoes, etc.
Consider adding tomatoes for more acid/brightness (maybe 1 tomato?)
Cauliflower, broccoli would also be good
Try tamari instead of soy and use full amount - it can take the seasoning
Simmer with lid on to retain moisture
Consider 1.5 c coconut milk and 1.5 c stock for more sauce
Use coconut milk, not cream
Use a good green curry paste - Sprouts brand is underwhelming
For more heat add a serrano or thai bird chili
Would be good with kaffir lime leaf

Turned out nice and soft (not crispy) but better for the Thai curry
In oven 25 mins rotating at 10 mins left
Added 2 medium zucchinis with carrots and peppers
Cooked in Dutch on Duxtop, worked okay
Try saucier pan next time - while it will be overcrowded it will be better for end simmer and more controllable with heat
BEST CRISPY BAKED TOFU probably for anything where you want your tofu to have texture
We have not actually made this recipe except for the tofu part
