This is a spicy one, drawing on spice from the raw chopped red onion and chipotle peppers in the dressing
Tastes even better as it sits
Can substitute flat leaf parsley in place of cilantro if desired
Cashews can be used in place of peanuts
We liked this best with one TBSP honey in the dressing
